Iron is an essential mineral found in two forms in your diet, heme iron and non-heme iron. It's a key component of red blood cells, enzymes involved in energy production and supports a healthy immune system. Heme iron found in animal products is more easily absorbed by your body. Non-heme iron is found in plant and dairy foods. Vitamin C helps you absorb non-heme iron. Iron is relatively stable in vegetables even with cooking.
