Vitamin A describes several related compounds including retinol, retinal and carotenoids. Some carotenoids found in plant foods such as beta-carotene are converted into retinol in the body. Vitamin A is necessary for normal vision and supports your immune system. Carotenoids are generally stable during food processing. Because they are fat-soluble, cooking with a small amount of healthy oil (e.g. olive oil) may be beneficial.
