Barbecuing is a quick way to cook vegetables which means most of the nutrients are retained. It’s also tasty, as they develop a delicious smoky flavour. If you don’t have a BBQ, you can use a grill pan instead.
Brush vegetables with a small amount of oil before throwing them on the BBQ. Small chunks will cook more quickly than larger sized vegetables.
If you’re cooking with frozen vegetables, don’t defrost them first as this will reduce the amount of vitamins available to you.
