Carbohydrate is a macronutrient that contributes energy to your diet. Carbohydrates include sugars and starch which are digested by enzymes in your gut and broken down into glucose and absorbed by the small intestine. In most cases carbohydrate is stable but during storage of some vegetables starch can be converted to sugars.
